They thought nobody wanted healthy food. I disagreed and pushed my way in!
My name is Chanah Auerbach and I am a Gourmet "Clean Eating" Chef. I started the Raw Food Program for Whole Foods Market in Venice Beach, CA and after moving to Israel, five years ago, I became the Executive Chef at Mitzpe Alumot, a cleansing center in Northern Israel, followed by educating 120 school girls about healthy cooking, leading me to where I am now - running a healthy cafe in the middle of Jerusalem's Open Market, "the shuk."
After entering an empty cafe across from the Jerusalem Open Market, “Shuk Mahane Yehuda,” I was struck with the need to bring healthy, “gourmet fast-food” to the Jerusalem community.
I introduced myself to the manager of the Natural Choice Bakery, a bakery providing healthier baked goods to the Jerusalem Community, and pitched my cafe idea. The manager didn’t believe the Jerusalem community wanted healthy food, so he gave me a two month trial to prove him wrong. A year and a half later, thank Gd our cafe is doing better than ever!
Over the last ten years I have had many chef-ing experiences, all providing delicious, healthy food to health and non-health conscious consumers. I have been blessed with hands that know how to make healthy food for the masses, but to be honest. I do not enjoy being a chef. Being a healthy chef, is my G-d given service.
My true passion lies in teaching. Through teaching my customers small healthy-cooking tips, I am filled with the energy to continue. When I see a clients face light up, having learned something as small as the importance in soaking nuts and seeds, for better absorption, I have more of a desire to continue chef-ing.
I chef to provide people with delicious, nourishing foods, that satisfy the body, without stuffing, or putting someone into a food coma. BUT, I am rejuvenated when the client who “dislikes healthy food” comes back, because their perception of healthy food, has changed.
I LOVE creating a space where people feel alive. The Natural Choice Cafe has become more than a healthy cafe, but more of a “therapeutic cafe.” After a few clients began calling me their “health-tender” I took the liberty of enrolling myself into a Narrative Therapy Course, so as to be able to help my clients through more than just the body.
My truest form of service is helping others, yet I keep hitting a wall! I moved to Israel with a small savings and a huge amount of faith.
From all of my chef-ing experiences, the most fulfilling ones for me were when I was a. teaching cooking classes every day to eager adults, at a wellness center, ready to switch their culinary habits to become healthier; and b. teaching 120 religious girls, from below poverty level households, ages 6-12 about the healthy choices.
