Joe Soltis, owner and operator of Uncle Joe’s 5 Star Bar-B-Que Service, is the hardest working man in the barbecue-for-hire industry. Every Saturday you can find him at the Victoria Diner on Rt. 206 in Branchville, NJ, where he lovingly tends his smoker all through the night. Before noon the next day, he and his wife start serving up the best Bar-B-Que in the state of New Jersey. Starting with prime cuts and adding signature spice rubs, together with premium hardwoods like Hickory for smoking, makes for some of the most succulent, mouth-watering meats you’ve ever tasted. Rounding out his offerings with excellent home-made sides like coleslaw, baked beans and tangy red and Carolina style sauces, Joe is a master of his craft. The lunch crowds that gather around his tent are non-stop, and he often sells out of product in a short amount of time.

Increasingly large crowds of customers, as well as sizeable off-premise catering orders, have given Joe a new vision: A Food Truck. This would increase both his capacity and mobility, allowing him to offer his smoky and delicious bar-b-que far and wide, reaching more happy customers than ever.

A year and a half ago, Joe endured triple bypass surgery. And while it didn’t dim his enthusiasm or dedication, medical bills are piling up, as they usually do.
