Help Build an Organic Bakery and Production Kitchen in Idaho
Donation protected
Hello Organic Beach Bums!
It’s Rebekah from The Beach Bum Bakery! Thanks for checking out my fundraiser for your favorite ORGANIC bakery in North Idaho!
Our Vision
Our vision is to establish a bakery in Kellogg, Idaho that will meet the needs of people who value 100% chemical free food and the effort it takes to create organic, non-GMO and tasty products. Our start up shop in the Silver Valley will be an iconic and locally family-owned organic bakery which will include a coffee shop and eatery open to the public. Our facility will also be used as the production kitchen for stocking our mobile bakery shack to sell at local farmers markets and for fulfilling all our subscription orders with deliveries to Coeur d’Alene. Eventually, we envision producing products for wholesale and online ordering with shipping across the USA and we hope to establish a second bakery in Coeur d’Alene and perhaps a third in Hayden, Idaho.
Our 100% chemical free bakery, coffee shop and eatery is the only one like it in the area! We are careful to make sure that every ingredient is carefully sourced and of the highest quality, that the water is purified and the dough is cultured. Locals, tourists and visitors can be confident that everything made in our store is real, authentic and nutritious literal food and nothing else.
Our Mission:
The Beach Bum Bakery understands that people become what they eat. Food can either heal or create disease. Therefore, our mission is to keep our food fresh, simple and delicious by keeping 100% of chemicals and toxic elements out of every ingredient used in our bakery, eatery and coffee shop. Our delicious homemade food, our sunshine filled shop and our cheerful staff are sure to make the heart and body happy with every visit and every bite.

Who are we?
We are a local Idaho family who from October 2022 through September 2024 worked hard to establish our bakery’s vision, develop our recipes and customer base in Coeur d’Alene and the Silver Valley. With a TON of hard work and literally ALL the financial resources we had, our little cute mobile bakery was born. We are literally the only fully organic, clean food bakery, coffee shop and soon-to-be eatery in the entire Silver Valley and extended Coeur d'Alene area. Now we have a name in town. Locals know us and they visit to support us weekly. Discerning tourists have discovered us while they have been on vacation in North Idaho and have been happy to find an organic bakery and coffee shop in town! You may have seen us at the 5th Street Farmers Market in downtown Coeur d’Alene in the summers.
Where are we now?
We closed temporarily this past October 1, 2024 in order to re-structure as our methods to serve our growing customer base was not sustainable anymore. Near the beginning of November we met with a lot of great customers and local and successful business owners to figure out a strategy to move forward with. At first, we did look for an asset investor so that we could open in Cd'A right away. But that path didn't open up. Instead we have been led into a better situation for our family. So, keep reading to get a peek into our plan forward and how you can help us re-open. First, a little about us….
“Really friendly and cute food truck with EXCELLENT bread!! When I took home the small loaf of jalapeño cheddar sourdough bread my husband (in his 60’s) said it was the best bread he had ever had!!” – Sui Nieh [ pictured is our last location in the Lowes parking lot in Coeur d'Alene, Idaho ]
Our story:
Isaac and I have a beautiful daughter, named Hadassah. She is capable, hopeful and my remember girl. But now that she is older she wants a job like everyone else. Understandable! Early on she tried applying at different places to work, but they rejected her. Super hard on the heart. I didn't understand, because with a little training she is totally capable!
So a dream of ours has been to create a bakery for her to work in. It needed to be a safe place her to work where she could learn a trade and be empowered to earn money. A place where she would be challenged, learn to meet expectations and be part of a team. I wanted to create a place where she could learn new things, know she was valued and part of something special.
Over the past 2 years, against all odds she HAS learned the baking trade from me. We did it together! Her and I started in our cottage kitchen in 2022 doing popups and quickly expanded to renting a commercial kitchen and selling out of our mobile bakery shack. We moved around to different locations and Farmer's Markets throughout the years and quickly became known for for our organic products like sourdough breads, New York bagels and honey challah to our cinnamon rolls, sourdough-baked apple fritters and scones. Hadassah makes 3 of our most popular foods (chocolate chip cookies, chocolate energy balls, tortillas) and she squeezes all the lemons for our lemonade!
Over the past 2 years we have built a healthy customer base and proved that there are hundreds of people in North Idaho who want to buy and eat organic food! Our customer base has increased significantly since we founded in 2022. Many people LOVE our bakery and want to see us continue on and thrive.
Your generous donation today will help me continue to build a bakery for Hadassah to work in for the rest of her life. And of course, there will be many others who will join our family at The Beach Bum Bakery over the years. You will be setting us up to be a safe place for other children and youth to perhaps work at through our future baking camps (part of our long term plan).
"We have been thoroughly enjoying our loaf of the artisan sourdough! You an add me to your list of people who are gluten sensitive but can enjoy your bread without any issues." – Wendy [ pictured is our Organic Kalamata-Olive Rosemary Artisan Sourdough Bread ]

• 1,105 returning customers
• 611 customers who have signed up for our emails
• 1,032 customer interactions on Google
• 4.9 stars from 48 Google reviews

I think those numbers are amazing! And we don't want to disappoint all these great people by not re-opening! Therefore, we are bringing to life the next phase of our bakery! This phase, which requires your help will bring new methods to achieve sustainability, staffing, reducing costs and increasing revenue so we can re-open, stay open, hire well, grow and thrive. We have figured out how to do this and now we need your help to reach our goal. Keep reading! :-)
“You won’t find organic, healthy, delicious, goodness anywhere else! The Beach Bum bakery is the BEST in North Idaho! And to be honest the best baked goods I’ve ever had! The bagels are the BEST I’ve ever tasted! EVERYTHING is SOOOO YUMMY! They always have the best selection I find it’s best to choose at least 1 of EVERYTHING!” – KC LaRue [ pictured is our Organic Honey Whole Wheat Bread ]
We have a location!
311 South Main Street, Kellogg, Idaho
At the launch of this Fundraiser we secured a store front shop in Kellogg, Idaho on Main Street for our bakery! We moved in on Dec. 2nd 2024. Our new place is HUGE! It has 4,300 square feet! There is plenty of space to grow and do things not possible if we were still renting another's kitchen to work out of. With a remodel already done in the main bakery room and front of house by the landlords prior to us moving in, all we need is some equipment, a build out for our sales counter, signage, permits, a little capital for hiring and hookups so we can open!
Steps to achieving our vision
A simplified vision has evolved over the past 2 months. Here are the bullet points:
• We are currently building our kitchen out to be our main production facility for our organic bakery bags, organic cookie boxes and sourdough bread subscriptions. These subscriptions will be available to the public (with deliveries to Cd’A) as soon as we get everything we need to open. These subscriptions will be our steady 'bread-n-butter."
• We will use this production kitchen to stock our iconic bakery shack for the 2025's summer 5th Street Farmer's Market in downtown Coeur d'Alene.
• As soon as our equipment is in, the permits are given, our build out finished, and capital is attained to hire staff, we will open the front of house as an organic coffee shop with pastries and fresh bread for sale for walk-ins. Locals and tourists will be able to come into the bakery, buy bread and pastries as they come out of the oven and sit down to eat if they wish.
• By summertime we will add food to our menu and become a local go-to and destination organic eatery, open for breakfast and lunch with items like organic soup and bread, sandwiches and more!
• Our long term plan includes offering shipping throughout the USA and to wholesale certain products to coffee shops across Idaho, Washington and Montana.
In the future we will be creating baking camps for youth, stress-free adult baking classes and food education seminars. We also hope to be able to host things like a soup kitchen once a month for the local needy and annual scholarship fundraiser events to keep our baking camps free. In time, we will move towards hosting ‘work-aways’ for qualified applicants who want to help us with renovations and ‘baking experiences’ for tourists who come to Kellogg, Idaho to ski and splash at the Silver Mountain Resort and Waterpark. And of course, eventually we would like to expand and open a second location in Coeur d'Alene, Idaho, but that’s years out, if YHVH is willing.

The kitchen in our Kellogg location is coming along nicely! We have added our gas range since this photo!
But in order to get there and realize ANY of the above …
Your Help Needed!
Obviously, the ideas are endless and we will take each stage slowly for guaranteed success, but currently we are moving ahead with our plan and moving the bakery into our new location. But as we do this we need your help. That is what this Go Fund Me fundraiser is for. In this campaing we are sharing with you our needs and what we must have in order to open. The following are the basic equipment and basic needs in order to be able to open this Spring of 2025:
• Commercial convection ovens
• A gas range and a conduction oven
• A commercial 3-compartment sink, hookups and nozzle
• Commercial freezer and refrigerator
• Rolling sheet pan racks
• Advertising and signage
• The sales counter and front of house decor
• Power into the kitchen and water hookup
• Money for getting our permits and to start hiring
• Move-in costs and bills for while we are doing the build out
I know that sounds like a lot, and it is. But as a community it is doable. We have been purchasing quality used equipment and applying for permits as we get donations. But we could use some big donation help to keep going. Please see our campaign updates to see where we are with our purchases and how we are using donation money. If you want to see an organic bakery, coffee shop and eatery in the Silver Valley, please give as you are willing and capable of doing! Thank you!
“Love this bakery!! Everything they make is organic and nutritious! There is such a wide variety too! I could not recommend it enough!” – Laura [ pictured is our Organic Honey Challah ]
Quality over quantity!
Our classic old-fashioned recipes are simple, delicious, authentic food. Clean and made by hand in small batches! Customers can come into the bakery and buy bread and pastries as they come out of the oven and see their food and drinks being made and ask us questions.
Supporting local
We are committed to buying from local organic farmers and artisans as much as we can.
Organic commitment
My Senior Research Project at Boise State University in 2013 was on GMO’s, Big Ag and the direct correlation to the rise in disease. After that rude awakening I became dedicated to serving my family only ORGANIC NON-GMO food. I can’t morally bake and cook any other way. The Bible says that we become what we eat! So, our health is directly related to the quality of food we feed it. Our bakery will be there for those who want to invest in nutritious food and not in future medical bills. Customers can be assured that ALL the ingredients in every item we sell are carefully sourced and are ORGANIC (100% chemical free), farmed with organic practices, whole food, NOT on the dirty dozen list and/or are at the very least GMO FREE!
“I enjoy an apple fritter every now and then. HOWEVER, yesterday while stopping by the Beach Bum, I thought ‘ehh, why not’. Holy smokes Batman!!!!! Those were the most deliecious fritters I have ever had. So fresh and appley!!!!! Absolutely the very best! ” – Terri T. [ pictured is our Organic Strawberry Pie ]
Your Generous Donation is Appreciated!

Your very appreciated!
I know there are a lot of needs on this planet. Everyone and every venture needs money. I wish it wasn't this way. I wish I didn't have to ask for help. But I do. I've tried to get business loans, but they haven't been approved. Our personal and business credit cards are maxed out. Without your generous support The Beach Bum Bakery may not come into reality. I believe that you want this bakery to exist. I believe that you want to bring your family to our bakery to get your organic bread, pastries, treats, drinks and food. I believe that there are other organic nuts like me out there who are longing for an organic 'eat out' option.
Please don't assume someone else will give.
I need YOU to come alongside of this bakery ( a bakery that now has a life of it's own ) and support it. This is a 'mom and pop' local business, built with a lot of blood, sweat and tears. I'm sure there are a lot of people in town who watch Instagram and YouTube shorts and think that it would be fun to start a bakery or even just a micro-bakery. But it's HARD! It's not a game for us. It’s costly, it's risky and a TON of work. But I think we have figured out a way to reduce the risk and bring it to a sustainable place.
“Such a friendly vibe and yummy treats with the comfort of knowing it has the best ingredients only!!” – Kamryn [ pictured is our North Idaho Wild Huckleberry Organic Danishes ]
Why GoFund Me?
We thought about doing a Kickstarter campaign, but I honestly can't wait for a campaign like that to fund. Neither can I promise anything extra for donors at different donation levels. I have my hands full with just getting the bakery back up and running! The same with Patreon. I don't have the time to make videos and content for donors. You don't want videos of food - you want the food, literally!
GoFund Me is simple and straightforward. You donate and we get the funds right away to start using them. Yes, they take a little bit for their part, but you can always avoid that by giving an offline donation by mailing it to us (2900 N. Government Way; PMB 173; Coeur d'Alene, Idaho 83815) or by dropping it by the bakery).
But please know that I can't promise anything to you except the following:
• that we will use your money as wisely as we can
• that we will go slow in order to make every baby step be a success financially
• that we will continually look to relieviate stress points to create a sustainable organic bakery, coffee shop and eatery
• that you will be invited to the grand opening
Of course, in the end I will for sure put up a fun donation display at the bakery to say, 'thanks' to all those who have donated to our success. And I would love to send you a thank-you card! If you would like that, please put your mailing address into a message to me here in GoFund Me. So, thank you in advance!

But ultimately, we all build for an eternal reward to come, not here - right? :-) What you give today will be seen by the ONE who has put this bakery on the map through the passion He put in my heart to solve Hadassah's need and for serving truly clean and delicious food and bread to my community. The reward He has for you is so much more than I could possibly give you.
