My name is Lara de la Rosa, and I am the owner of Lazy Cow Bakery . We are a team of bakers that are passionate about bringing you a broad and exciting selection of vegan pastries and cakes. We specialize in those hard-to-find items such as meringues, croissants and custom cakes.
Thanks to our wonderful community support, we were able to sign a lease for a brick-and-mortar location in the Fremont neighborhood of Seattle, WA. We started the initial phase of construction and are very close to opening for indoor seating and excitingly -- our espresso bar! We plan on serving choice craft coffee and aim to be your go-to coffee destination!
In the interim, we have been running pop-ups out of the front door and doing all our baking out of a commissary kitchen. This is not ideal, but it at least allows us to continue offering birthday cakes and pastries. Our long-term goal is to raise enough money to move completely out of the commercial kitchen and into the Fremont location. This means less time spent transporting goods, and more time testing and perfecting recipes!
Unfortunately, we have run into plumbing issues during construction that require new architectural drawings and more extensive work. Opening a store-front is prohibitively expensive, with the costs of permits, architects, equipment and construction. This added and unexpected cost has been extremely detrimental to our plans and has led us to turn to you for help! With your support we can get over this roadblock and be one step closer to being the bakery of our dreams!

Expanding our Menu!
As we grow over the next several months, your support will help us to purchase a dough sheeter and proofer so we can start offering croissants! Rolling out croissants by hand is a painstakingly long process, so we have been waiting until we can upgrade equipment before we start offering them! You can also expect even more pastries and an expansion of our gluten-free items!
Community Fridge & Food Pantry
Located inside our bakery is our free community fridge & food pantry. A community fridge serves as a collective resource for free food, open to all. The pantry will hold shelf-stable items such as rice, bread, beans and pasta. This will be available anytime during normal business hours. Our long-term goal once the back kitchen is completed will be to give away ready-made meals for those in our community without kitchens.

Lazy Cow Bakery's Mission
Our mission is to bring joy through our pastries and cakes while placing emphasis on a socialist production model.
We care about the fair treatment of all workers and their right to be treated with dignity and respect. Part of this ethical framework means that our workers get part ownership of the bakery and to make decisions about their wages and work hours. Lazy Cow Bakery has an associated social justice organization, La Casa Del Xoloitzcuintle. Casa del Xolo, for short, is Latinx mutual aid organization that responds to the needs of the community and serves as a cultural space for education and empowerment.
We hope to become an essential part of the Fremont neighborhood. With your help we can build our reputation as a vegan bakery with a standout business model based on compassion and community.
