Trinidad Charlie is all our favorite hot sauce because Charlie makes his hot sauce by hand in small batches with love. For those of us lucky enough to know him personally, we know he uses natural ingrediants from his garden on St. John. This is where he grows the peppers, papayas, pumpkins and limes for his hot pepper sauce.

When Irma hit, it was clear that Charlie would need help. It's been two long weeks yet Charlie has finally made contact with us and is reporting that a tree fell through his roof during IRMA and he needs a new kitchen. It's been unkown whether or not he would stay, but he let us know he is going to rebuild. And, as they say, Charlie is no spring chick. He's going to need help.
