Before the pandemic I taught whole pig butchery classes, catered events and processed meat shares that connected urban and suburban consumers with their excellent local farmers.  

Now Butchery 101 is pivoting to an online educational platform, beginning with a YouTube Channel - and I need YOUR HELP. 

With the recent allegations of racial and gender discrimination at nearly all major food publications, (looking at you, Adam Rappaport's Bon Appetit) it's time for a reckoning across the board.  

It's time we start genuinely investing in BIPOC and women.  It's time we invest in anti-racist and anti-bigoted companies and systems.  

I have worked in both food production (restaurants, butcher shops, meat packing) AND online content creation (ChefSteps, The Cut, Tastemade) so I know that the lack of representation for BIPOC and women in both industries is REAL.  This is especially true for positions of management; of the aforementioned workplaces only one of these companies featured a team of mostly women.  

From my first hand experience in these fields I also know that in order to be truly competitive in the content-creation space my business needs some serious technology upgrades, media professional help, and provisions: 

1. A computer upgrade to a Macbook Pro with memory capacity and a processor appropriate to video production, editing and uploading. I’m currently editing on my phone. And before that I was editing on an iPad Air with like 16GB memory - which I found out is not enough to edit and upload even a 5 min video without some serious hiccups.      

2. A camera upgrade to an iPhone SE (new) - upgrading from the previous generation of iPhone SE. Check out the existing Butchery 101 YouTube and Instagram content - it’s almost all from an iPhone 6 or less.  Fam, I didn’t even have Portrait Mode! 

3. Professional knife-sharpening services for my knives. Properly sharpened knives are paramount to good butchery, but high-quality sharpening is expensive.

4. Butchery 101 only supports local farms and well-raised meat.  All meat featured in the educational videos will be from a local independent butcher shop or farm.  Each video so far has required about $100 worth of meat to make so these funds would go a long way to help produce high quality videos AND support a local sustainable meat system.  

5. Any excess funds over the stated goal will be used to explore options to outsource certain high-level skilled tasks like video editing, web design, accounting.  Things that, as a butcher, I'm not great at, and if a professional were to do them, YOU the content consumer, would receive a better product.  

6. All funds will be used exclusively for business purposes.  This will be an investment in Butchery 101 as a food media company, not charity for  Kristina Glinoga as an individual.  I am happy to provide proof of my personal savings that can float my expenses. 

Your support would also contribute to a more diverse (i.e. counter white male privilege in meat), humane and equitable food system.  

As an immigrant, woman of color I am much less likely to receive venture capital funds, promotions to positions of management, or even an equal wage to white male peers doing the same job.  I'm even less likely to be seen as a knowledgeable butcher by customers.  

By contributing to this fund you are facilitating the growth of an immigrant, woman-owned business from a side-hustle to a competitive entity in food and food media.  Again, Butchery 101 only supports good local farms that contribute positively to our climate via holistic management, relatively tiny carbon footprints and respectful work environments.  

Finally, your support would mean that I could continue to shelter in place and abide by the CDC guidelines to stop COVID-19.  Many of my other options in the field of butchery pose huge threats to my safety and the safety of others. 

The meat industry, although "essential", has been a hotbed of COVID-19 spread and deaths.  I love this industry and want to see it thrive and improve, but with the leadership as it is, returning to work in these environments is massively risky during the pandemic.
