Emma's food dream

What do you do when you've got as many photos of food as you do friends on your phone?

What do you do when life has recently thrown more lemons that you thought possible?

You take that as a sign

and

follow your dreams...

I'm Emma. I love food.
Loooovvveeeeeee!
I read about it, watch it on TV, research it, dream about it, invent new recipes with it, write about it, photograph it, hunt it down in every place I visit.

It is my passion. It makes me feel alive. It is my happiness.

I am also a science communicator. Which means I take science and translate it so that everyone can enjoy it, understand it and make better choices using it.

Combine these two things and I find my sweet spot. The place where food and science combine. What does that actually mean? It means looking at how we use food, how we prepare it, how we cook with it and how we choose it using evidence rather than hearsay. It's about thinking about it and not being caught up in marketing, or fad or opinion. It's about using what food you have and being smarter about it. It's about exploration and experimentation and discovery! And it's about making it easy and straightforward so you can do it in your house with what you have!

If you want to try some of this out, this is my website : www.culinaryscience.com.au

So what is the dream that I am trying to follow?
Two week's of study in France. Only 25 people are selected for this course annually. After applying I have been awarded a place in the 2016 annual program.

The course covers culture, history and science - all within the context of *gastronomy! (*Yep...fancy word for food.) It is a diploma in Advanced Studies in Gastronomy and Taste.

It is held at Le Cordon Bleu - Paris. The oldest and one of the most prestigious culinary schools in the world (established in 1895) and at the University of Reims Champagne-Ardenne. Upon completion of the course I do an exam and submit a thesis (7 months later) in order to be awarded a University of Reims Champagne-Ardenne diploma (Diplôme Universitaire du Goût, de la Gastronomie et des Arts de la Table - DUGGAT).

Two weeks of talking, sharing, learning and being immersed in food and science!

My dream come true!
And a turning point...

In the past 12 months, I have had a pretty terrible run of luck. I don't feel it appropriate to go into details here, but it has made me realise that you should follow your dreams while you have the chance.

I know I would (and do) support anyone who wished to follow theirs and one day, when I am back into a secure financial position, I will. But right now, I can't afford to do this amazing experience (I can't even get the credit to do it due to my current circumstances) - but I can't afford to let this pass either.

How can you help?

So I am asking for donations towards my dream. And I will in turn pass on the same generosity soon when I am able. Any amount - big all small would be greatly appreciated!

If you're able, please share this request amongst your networks.

I really appreciate your time, I hope you can help me out.

Em xxxx
