Composting on the Coast Project

$218 billion a year is spent in the United States growing, processing, transporting, and disposing of food that is never eaten. Without a sustainable solution on Martha's Vineyard, the team at Composting on the Coast is actively researching ways to reduce, recover and recycle food waste. In June 2016 our team launched a 4-month summer pilot project to learn about how much commercial food waste was being produced and if it could be successfully composted on local farms. The launch started with 6 restaurants: Atria, Isola, Port Hunter, the Square Rigger, The Lookout Tavern and Park Corner Bistro. The unconsumed food is composted at Morning Glory Farm, where it will be used to grow delicious crops next year so we an all enjoy more local food.

As restaurants join the project they are finding how easy it is to separate organic waste to allow for nutritious compost production and as a result more delicious healthy vegetables being grown on farms. We're all working together to close the loop for Martha's Vineyard's food system, one banana peel at a time.
