Seeking advance sales to help offset start-up costs for the Brown Bag BBQ and Catering Co.. I found a terrific lease opportunity in Bisbee, AZ in a recently renovated, alas, failed drive-thru coffee facility. Key advantages are that the kitchen with drive-thru was recently approved by the local health and building departments; refrigeration, work tables and other equipment are included in lease; AZ Hwy 92 frontage; location near Safeway Grocery; room on the corner site to install a smoker/bbq rig; permissable zoning; and a very, very affordable lease rate. I snatched the opportunity, have the keys, and am cleaning the place up.
Bisbee is a hot little mountain tourist town with a lot of Wild West and mining history. For the biz, selling food at regional events and marketing catering contracts to nearby Sierra Vista and Tombstone are doable from this Bisbee location. By the way, Bisbee was just named the Best Historic Small Town in America by USA Today Readers. Take a Google, then come take a visit. The elevation keeps things on the cool side all summer long.
I believe BBQ is an artform and is best done by the batch. Catering jobs too. My focus shall lie upon batch creations for weekend BBQ events on premises as well as personal, business, and fundraising catering. I also anticipate getting a hot dog cart approved, staffed, and running for mobile vending throughout Cochise County soon after the primary kitchen is approved. While the focus will always be on the food, I will offer spice rubs, sauces, smoking chips and satchels, T-shirts, aprons, etc. at events and via the interwebz. Slow Smoked Pork Ribs, Beef Brisket, Pulled Pork, Chicken Wings, and Mouthwatering Gourmet Sides will be menu standards.
With insurance, rents, security deposits, utility turn-ons, business licensing, used restaurant equipment purchases, exterior smoker and BBQ build, hot dog cart, starting inventories, marketing materials and more, I am looking at nearly $10K minimum to get started. While this is my boat to steer, the opportunity to snag a clean, recently approved, centrally located commercial kitchen fell into my lap and has caught me a bit underfunded vs. the opportunty and work at hand.
