Dream Kitchen for Bone-In

BONE-IN HAS BEEN OFFERED A DREAM HOME!

Our mission is to empower the community to support our local farmers by bringing their offerings directly to our tables. The local farmers we partner with use sustainable farming practices that improve the land and offer the healthiest nutrient-dense food.

Our Dream Home
We have been offered an outdoor banquet and kitchen space directly on a field belonging to one of our farming partners. The kitchen is ideal for food preparation as well as outdoor farm-to-table meals. It is perfect for gatherings for the families in our communities and for our supporters. With the addition of the kitchen we can bring more nutrient-dense, fresh, sustainably raised food to your tables. Think how nice it will be to have us prepare you dinners full of ingredients that have been sourced only from our farm partners! a menu that will change with the seasons as we uphold our mission of supporting our farmers while offering you the healthiest and tastiest food.

Our new space is an outdoor facility. Since it is not yet insulated or winterized, we need your help.




Lets recollect how we got here ...
Bone-In started from our Jersey City apartment in 2014. At the time, we served hot Paleo meals delivered to our Jersey City friends, neighbors and colleagues.


The Jersey City community immediately became receptive as the demand for transparency and quality food was beginning to surface. All great news!

The unfortunate news was that this journey had to start
because of circumstances that were not ideal for any newly married couple. 

Ron before he was diagnosed

In June of 2013 Ron was diagnosed with Adult Onset Stills disease, a very rare auto-immune disorder.  After months of battling with no clear diagnosis and numerous doctors (a total of seven specialists) it almost claimed his life by inflaming the tissue around his heart.

Two years of heavy prescription drugs and monthly biologic treatments saved him but threatened his quality of life with terrible side effects and crippling debt.


In desperation, Ron elected to try a more natural approach, to look closely at our day-to-day decisions. We specifically focused on the main event, three-four times a day: FOOD.

Now, after five years of intense research, attendance at nutritional seminars and conferences, and through trial and error, hands-on experience, books and podcasts, we have discovered that food intolerances and excessive inflammation are the leading cause of disease in all of us, the result of our typical diet of primarily processed food.

An understanding of the power of food has persuaded us to pursue a direction in self-healing and avoidance of disease through nutrient-dense, locally fresh, unprocessed foods. Within a few weeks of embarking on our new regime we noticed a vast improvement in Ron's day-to-day health. The impact of our profoundly changed diet inspired us to share our methods with others.

Since that time, we have evolved to both a provisional and prepared food service, employing only the most sustainable local farming practices.

Our farms need to be as close as possible to our urban communities in order to ensure freshness and nutritional integrity.

Ron getting a regular hands on education 

Farmers markets have been a great way to share our education and mission.

For over two years we have jumped between commercial and shared kitchen spaces as we rose to the challenges of starting a family and a business. Our mission is to make a living while making whole, fresh, locally grown food more accessible, convenient, and affordable for our community.

Thanks to our buyers, we have quickly outgrown our shared kitchen space, and that is where we are today...

Constantly reinvesting everything we have made, we have been able to reach a plateau of financial sustainability for our family. But this is not enough to take the next step for the Bone-In community; our own kitchen space.

has recognized our ambition and decided to offer us his banquet kitchen space in exchange for helping him offer more to his family's community of buyers. A win-win for both of us as interest in knowing your food source continues to gain momentum.

The chart bellow shows the cost for upgrades we need to make:


The current kitchen space is not winterized or built to meet the needs of everyday use. It is estimated that getting the kitchen up to standards and specifications for everyday production will easily cost over $30,000. Instead, we will be buying both new and used equipment shared amongst other farmer friends, as well as tackling most of the handy work ourselves.

The following is a break-down of these costs:

* Cooking Equipment and Setup $4,500.
Purchase and installation of cooking equipment (oven, stove, sous vide), industrial slicers and mixers. Includes delivery, setup and assembly.

* Cold Storage Equipment and Setup  $2,500.
Purchase of necessary refrigeration (Outdoor Walkin) and freezer space. Includes delivery, setup and assembly.

* Plumbing Upgrade $1,500.
Purchase of both required water (hot water heater, dishwasher/sanitizer, sinks) and commercial propane setup.

* Kitchen Setup $500.
Purchase of prep tables, additional hardware and required shelving/organizational space.

* Electrical Upgrade $1000.
Upgrade electrical outlets, hardware and panel boards for handling additional kitchen equipment.
